I would like to be able to disengage the AP without the physical position of the trim wheel causing the plane to go into a sudden climb or dive like it does when using a potentiometer. Has anyone done this? Can it be done. I thought of assigning the trim switch inputs to an encoder but I want a more precise control over it.

For sure....
TRIM is never done by a Poti..... its "always" a Encoder in every cockpit i saw till now !

Trim is a little difficult to build if you want a Motorised Trim Wheel..... This is a little advanced and need also mechanical solutions.
If the Trimwheel is just a Input ( no Motor) then its pretty easy.....:
Use a Standard Encoder..... Mount a nice wheel onto it..... And set in Mobiflight for LEft and Right simply the Elevator Trim Events.

May you need to rework the configs ( values) if the steps are to small or to big..... Or may you need a Cogwheel to change resolution. But basically this is no big deal !
