If building a MIP can I use Mobiflight for the various Radios I need instead of buying two or more Logitech Radios?

I am new to sims and to Mobiflight so be kind.

Sure you can.

Just check the projects section in Forum or Discord.... Or Check Youtube and search for "Mobiflight".
Then you see with MF also a Full B737 Cockpit is possible.

A Radio Panel is one of the easy elements and should work fine.

JUST NOTE: In Xplane the Data is maybe not directly available ( AddOn Aircrafts).
Here some scripting in XPUIPC Files is needed !
